Southern Pimento Cheese

Pimento cheese spread is a classic Southern appetizer served with celery or crackers. Make ahead for an easy, budget-friendly appetizer. You can even spread on bread for a tasty sandwich or grilled cheese.

Ingredients

  • 8 oz block sharp cheddar
  • 4 oz jar diced pimientos drained
  • 1/4 cup mayonnaise Duke's, Hellman's or Homemade
  • 1/4 tsp onion powder
  • 1/4 tsp dry mustard powder
  • 1/4 tsp salt
  • pinch of cayenne optional

Instructions

  • Using a box grater or food processor, shred the sharp cheddar cheese.
  • Transfer shredded cheese to a mixing bowl.
  • Add the drained pimientos, mayonnaise and all spices and mix until well combined.
  • Taste and adjust to your personal taste. If you prefer a creamier spread, add a bit more mayonnaise. Add salt and pepper to your liking.
  • Serve or cover and refrigerate until ready to serve. While you can serve immediately, I find the flavor is better once the ingredients have had time to mingle, about 30 minutes.

Notes

Tips: You definitely want to start with a block of cheese and shred it yourself. The texture of the cheese will be better. If using a food processor, you can shred the cheese and mix the cheese spread. Once mixed, allow the mixture to chill and flavors to meld for at least 30 minutes to get the best flavor.
Your pimento cheese spread will keep in the fridge for up to 7 days and you can freeze it for up to 3 months. Store leftovers in an airtight container.
Variations: I love to mix things up and try different additions to pimento cheese. My favorite is green olives. Dice up a few olives and pour in 1 Tablespoon of olive juice to your pimento cheese for a deliciously briney twist. You can also add garlic powder to your desired taste. Another tasty variation would be to add minced jalapeno for a spicy version.
