Easy Beef Shepherd’s Pie

We’re taking some shortcuts with this Beef Shepherd’s Pie (also known as Cottage Pie) by using frozen vegetables, tomato soup and beef stew seasoning. Make a double batch and cook one pan tonight and freeze the other for easy freezer meal prep!

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Peel and chop the potatoes into 1 inch cubes.  Place in a medium pot and cover with cold water.  Add 1 teaspoon of salt.  Bring to a boil and cook until tender, about 7-10 minutes.
  3. While the potatoes are cooking, brown the ground beef in a large (deep) skillet over medium-high heat.
  4. Add chopped white onion.  Lower heat to medium.  Continue to saute until beef is brown and crumbled and the onions are tender, about 5 minutes.
  5. Stir in the frozen vegetables, beef stew seasoning, tomato soup + ½ can of water. Continue to simmer for another 5 minutes.
  6. Once the potatoes are finished boiling, drain the water and mash with a potato masher. 
  7. Stir in ¼ cup butter,  ⅓ cup of milk (or desired amount) and salt & pepper to taste. Mix until you have a smooth texture.
  8. In a large baking dish, pour your beef mixture and spread to an even layer, then layer with the mashed potatoes.
  9. Bake at 375 degrees Fahrenheit for approximately 20 minutes.  Then turn on your broiler for 1-2 minutes to crisp up the top, if desired. 
  10. Carefully remove from the oven and let cool slightly before serving.

Variations

One nice thing about this recipe is that you can substitute most ingredients based on what you have in the freezer and pantry.

Feel free to use ground turkey or lamb instead of ground beef. If you can’t find beef stew seasoning, you can use 2 Tablespoons of Worcestershire sauce. This brings richness to the meat filling.

Easily use leftover mashed potatoes or instant potatoes prepared per the box directions in place of the mashed potatoes.

Optionally, top your shepherd’s pie with shredded cheddar cheese before baking for an added decadence.

Easy Beef Shepherd's Pie

Whip up a cozy dinner with our easy Beef Shepherd's Pie (or cottage pie) recipe! Layers of flavorful ground meat, veggies, and creamy mashed potatoes – comfort food made simple! And perfect to use up leftovers or meal prep as it freezes beautifully!

Ingredients

  • 1 pound ground beef
  • 1 small white onion
  • 4-5 russet potatoes
  • 1 (10 ounce) can condensed tomato soup
  • 5 ounces water
  • 1 (12 ounce) package frozen mixed vegetables
  • 1 (1.5 ounce) beef stew seasoning
  • ¼ cup butter
  • ⅓ cup milk
  • salt & pepper to taste

Instructions

    1. Preheat oven to 375 degrees Fahrenheit.
    2. Peel and chop the potatoes into 1 inch cubes. Place in a medium pot and cover with cold water. Add 1 teaspoon of salt. Bring to a boil and cook until tender, about 7-10 minutes.
    3. While the potatoes are cooking, brown the ground beef in a large, deep skillet over medium-high heat for 5 minutes, breaking up the meat as it cooks.
    4. Add chopped white onion. Lower heat to medium and continue to saute until the ground beef is cooked through and crumbled and the onions are tender, about 3 minutes.
    5. Stir in the frozen vegetables, beef stew seasoning, tomato soup and water. Continue to simmer for about 5 minutes.
    6. Once the potatoes are tender, drain the water and mash the potatoes with a potato masher.
    7. Stir in butter and milk. You can use additional butter and milk per your personal preference. Season with salt and pepper to taste. Gently mix until smooth texture.
    8. In a large baking dish, pour in your beef mixture and spread to an even layer. Then, top with mashed potatoes and gently spread evenly.
    9. Bake at 375 degrees Fahrenheit for 20 minutes, or until bubbly. Then, switch oven to broiler and broil for 1-2 minutes to crisp up the top, if desired.
    10. Carefully remove from the oven and let cool slightly before serving.

Notes

Variations and Substitutions: You can easily substitute or add ingredients. Ground turkey or lamb can be used in place of ground beef. If you can't find beef stew seasoning, you can use 2 Tablespoons Worcestershire sauce.

Easily use leftover mashed potatoes or instant potatoes prepared per the box directions in place of the mashed potatoes. Optionally, top your shepherd's pie with shredded cheddar cheese before baking for an added decadence.

Storage: Leftovers will keep in the fridge for 3 days or in the freezer for 2 months. Shepherd's Pie is one of my favorite meals to double the recipe, serve one for dinner and freeze the second for a future meal. From frozen, thaw in the fridge overnight and bake at 350 degrees for 40 minutes or until heated through or microwave.
