Using your slow cooker, this recipe makes dinner a breeze. Tender boneless pork chops and fluffy rice combine with the creamy goodness of cream of chicken soup for a comforting meal that’s sure to please the whole family. Plus, with a cooking time of 6-8 hours on low heat, you can set it and forget it, leaving you with more time to tackle your day. Such an easy recipe!

Boneless pork chops are notorious for drying out really easily.  Cooking in the slow cooker is my absolute favorite way to guarantee tender bites from one of the leanest cuts of pork.

Boneless Pork Chops: I recommend using pork chops that are about an inch thick.  You can ask your butcher to slice a pork loin into chops or you can even use bone-in pork chops

Rice: Long-grain white rice works best in this recipe as it holds up to the low and slow cooking.  I have not tested this recipe using brown rice, but I am confident that you could substitute.  Let me know if you try!

Cream of Chicken Soup and Cream of Mushroom Soup: The combination of the two condensed soups adds rich depth of flavor and umami

Seasonings: We are keeping it simple with salt, pepper, and garlic salt, but you can get creative and add onion powder, garlic powder or even Italian seasoning

Water: You’ll need a cup of water.  Feel free to use low-sodium chicken broth or homemade stock if you like

Optional Veggies: For a one-pot complete meal, feel free to stir in a bag of frozen mixed vegetables or sliced onions and mushrooms.  Either way, you’ve got a delicious, easy slow cooker recipe that cooks up completely hands-off.

  • 6-8 quart Slow Cooker (this is what I use)
  • Measuring cup
  • Mixing spoon or whisk

How to Make Slow Cooker Pork and Rice

  1. In the crock pot, combine both cans of soup, rice and water. Stir well to incorporate all of the liquid.
  2. Season the pork chops with garlic salt and pepper and add them to the slow cooker.
  3. Layer the rice on top of the pork chops.
  4. Take care to ensure that the pork chops are covered by some of the rice mixture.
  5. Cover and cook on low heat for 6-8 hours until the pork chops are tender and the rice is cooked through.
  6. Serve hot with your favorite veggie side and enjoy your delicious pork chops and rice casserole

Variations

The beauty of simple recipes is that you can easily change up one or two ingredients for a different take to keep things interesting:

  • Add a splash of half and half or heavy whipping cream at the end to add even more richness
  • If you’re a fan, try using cream of celery soup in place of the cream of chicken
  • Add in sliced onion or bell peppers for extra texture and flavor
  • Stir in frozen mixed vegetables or peas for added veggies and a pop of color
  • Swap the pork chops for boneless chicken breast or thighs for another budget-friendly meal idea
  • Onion soup mix can be used in place of one can of condensed soup.
  • Feel free to use chicken broth or vegetable broth in place of the water.  Given the salt in the condensed soup, I would recommend using low-sodium broth or make sure to taste your slow cooker pork chop recipe before adding any additional salt.
  • Leave out the rice when cooking and you’ve got tender smothered pork chops in a delicious sauce that can be served over egg noodles or mashed potatoes

What Side Dishes to Serve with Pork Chops and Rice Casserole

  • Steamed broccoli, green beans, peas, sautéed mushrooms, or roasted vegetables would pair very well
  • A simple side salad with vinaigrette dressing
  • Garlic bread or dinner rolls

Tips for Crock Pot Pork Chops

For extra flavor, sear the pork chops before adding them to the slow cooker. If taking this step, heat a large skillet over medium-high heat with one Tablespoon of oil. Sear for 1 minute on each side, then add to slow cooker.

You can also use bone-in pork chops for added richness, if preferred. Lastly, ensure the rice is fully submerged in the liquid to prevent it from drying out in this simple recipe.

Ingredients

  • 4-6 boneless pork chops, approximately 1 inch think
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup long-grain white rice
  • 12 ounces water
  • 1/2 teaspoon garlic salt
  • salt and pepper, to taste

Instructions

  1. Place cream of chicken soup, cream of mushroom soup, water, and rice directly into slow cooker. Stir well with a mixing spoon or whisk until everything is well combined.
  2. Season boneless pork chops with garlic salt and pepper and add to slow cooker.
  3. Give a quick stir to make sure the pork chops are covered with some of the rice and soup mixture.
  4. Cover with the lid and cook on Low for 6-8 hours or High for 3-4 hours. (Optionally, you can stir half way through the cooking time.)
  5. Serve with your favorite vegetable side.

Notes

Storing: Leftover pork chops and rice will keep in the fridge for up to 3 days or in the freezer for up to 2 months.

Variations: You can easily use this same recipe with boneless chicken or bone-in pork chops. Also, feel free to add a bag of frozen mixed vegetables or sliced onions or mushrooms for a complete meal. Another option is to stir in a handful of spinach in the last 30 minutes of cooking.
