Strawberry Cake Mix: You’ll need one box of strawberry cake mix. Please note that food brands are changing the size of cake mix, so you may see anywhere from 14 to 16 ounces, while 15.25 is the most common. All of these will work with the given measurements.

Oil: When it comes to baking, you want to use a neutral oil that doesn’t have flavor that may affect the cookies. I generally use canola oil, but you can use vegetable or even refined coconut oil.

Eggs: With this cake mix cookie recipe, we are using large eggs. If you only have jumbo eggs, consider using 1 whole egg and one egg white.

How to Make Strawberry Cake Mix Cookies

  1. Start by preheating your oven to 350 degrees Fahrenheit and line two cookie sheets with parchment paper or silicone baking mats.
  2. In a large bowl, combine cake mix, eggs, and oil. Stir until fully incorporated and there are no dry clumps of cake mix.
  3. Gently stir in chocolate chips until just combined.
  4. Using your hands or a medium cookie scoop, form 2 inch balls with the cookie dough.
  5. Place the formed cookie dough balls on large baking pans, making sure they are at least 1-2 inches apart.
  6. Bake at 350 degrees Fahrenheit for 12 minutes, or until the edges are just starting to brown. The middle will still be soft and will continue to cook as the cookies cool.
  7. Remove from the oven and let cool on a cooling rack.

How to Freeze Cake Mix Cookies

Cookies made with cake mix are really easy to whip up, but if you would like to have prepared cookie dough on hand you can portion out your cookies and freeze them. It is best to freeze them on the parchment-lined sheet pan until they are frozen, and then you can place the frozen cookie dough balls in a freezer bag.

When you’re ready to bake your frozen cookie dough, take out as many cookies as you would like and bake at 350 degrees Fahrenheit for 14 minutes.

How to Store Strawberry Chocolate Chip Cookies

Your baked cookies will keep in an airtight container at room temperature for up to 4 days. *Pro Tip: Cookies will stay soft and chewy longer if you put a slice of bread in the container. The bread keeps the cookies for getting stale.

Additionally, you can freeze your cookies for up to 2 months. I recommend wrapping the cookies in plastic wrap before placing in container or freezer bag so that they have an extra layer of protection from freezer burn.

Notes

Some examples: red velvet cake mix with white chocolate chips, lemon cookies, spice cake mix cookies, even brownie cookies.

Storage: Once baked, your strawberry cake mix cookies will keep in an airtight container at room temperature for up to 4 days or in the freezer for up to 2 months.

If you'd like to freeze the prepared cookie dough to bake later, form your cookie dough balls and freeze. Once frozen, place the frozen cookie dough balls in a freezer bag.

Frozen dough will keep for up to 3 months. When ready to bake, place the frozen cookie dough balls on your baking pan and bake at 350 degrees Fahrenheit for 14 minutes, or until the edges just start to brown.
